Pasta with Chunky Vegetable Sauce
If your child enjoys pasta, he or she will love this hearty recipe. Best of all, it’s a cinch to prepare. Simply add fresh diced bell peppers, onions and mushrooms to your child’s favorite pasta sauce and cook on low heat until the vegetables are tender.

Loaded Quesadillas
Add diced onion, bell pepper and tomato to a cheese quesadilla to make it more filling. You may sauté the vegetables beforehand to soften them. Top the quesadilla with fresh avocado and cilantro for added nutrition and flavor.

Sweet Potato Fries
Sweet potatoes are an excellent alternative to potatoes and offer more health benefits. Simply slice into thin wedges and bake until tender. Top with salt and pepper or add a sweet twist by sprinkling cinnamon and sugar on top.

Maple Glazed Carrots

Fruit Parfait
Fruit parfait can be served as a healthy snack or dessert. Simply combine 1/2 to 3/4 cup vanilla or honey yogurt with 1/4 cup blueberries, strawberries and blackberries. You can use other fruit variations based on your child’s taste preferences. Top with a small amount of granola for added crunch.
